HARVEST: it takes place at the end of October (when the bunches are ripe and slightly withered).

VINIFICATION: soft pressing, and fermentation in cement at the controlled temperature of 14-16°C
AGEING: 6 months in cement and 1 month in French barrique
ORGANOLEPTIC CHARACTERISTICS: Its yellow colour presents golden reflections, and has complex acacia and jasmine scent with slight balsamic hints of summer savoury, sage, peach and ripe pear. Soft and full on the palate, it keeps its natural freshness, minerality and saltiness which extend its persistence, leaving an almond tinge.
MATCH: starters, vegetable-based, fish-based, and white meat-based first courses.
