PRODUCTION AREA: this area is situated at the foot of a hill in Gambellara (Vicenza), with clayish volcanic soil rich in minerals, presenting red shades (0,89 – 100 m above sea level)

VINIFICATION: after the harvest, the must remains in contact with the peels for 10 days at the maximum temperature of 25°C. In this phase many reassembly are realized so to facilitate the extraction of the colouring substances and of the tannins. After the racking and the end of the fermentation a long series of batonnage is realized in cement barrels.
AGEING: 6 in cement for 6 months
ORGANOLEPTIC CHARACTERISTICS: this wine presents a ruby red colour. On the nose it recalls cherries, marasca cherries and red fruits. On the palate it is enchanting and harmonious.
MATCH: it matches very well with any kind of meat, first courses and aged cheese.
